criss cross apple sauce

BOULDERS - just a reminder to PLEASE come pick some apples from my tree! they are falling and smashing like crazy…. it’s dangerous for me to be out there as i am sure i will get bonked on the head by one and i cannot afford to have another concussion… i have enough trouble remembering stuff.

we have moved on to apple sauce as we cannot eat anymore apple crisp… 

APPLE SAUCE from martha stewart

4 cups peeled and cubed apples

1 1/2 cups water

juice from 2 lemons

3 tablespoons brown sugar

bring apples and water to a boil. reduce heat and simmer for 30 minutes. add brown sugar and lemon while simmering. put apple mixture into the vitamix (or some other kind of mixer) and blend.

the apple sauce (when chilled) is really good over fage yoghurt. of course, my preference is noosa vanilla, but one girlfriend told me that eating a tub of noosa is equivalent to eating a tub of pudding. i keep thinking i’ve found a yoghurt that tastes like pudding and every time, i learn that if it tastes like pudding, it pretty much IS pudding… sigh….
